Green Juice Limeade

Green Juice Limeade

What is the purpose of adding green veggie juice to your limeade, you ask?

And also, because green juice is delicious and why wouldn't you want to sneak it into something kids (and other people, like adults) love? Heck, you could even turn this fabulous juice into a popsicle, and really trick little ones into enjoying their greens!

Ingredients:
3/4 c. freshly squeezed lime juice
3 cups coconut water
2-3 T. liquid sweetener of choice*
1 c. cold-pressed green veggie juice**
Lime wheels, parsley, or cucumber for garnish.
Optional, but highly recommended: Pinch of pink sea salt

Notes:
*Liquid sweetener options: real maple, raw honey (lightly colored like sage or grapefruit), coconut nectar, agave nectar, or a homemade simple syrup (made by combining equal parts hot water and coconut sugar or turbinado sugar) would all work nicely here.

**If you don’t have access to a juicer, purchase a cold pressed green juice from your local health food store (even Trader Joe's carries one in the refrigerated section). Try to find a green juice with little to no major fruit involved, but if you can’t, that’s fine too! Just reduce the amount of liquid sweetener you add to the limeade, starting with 1 tsp at a time. For my green juice, I went spicy and used: 1 jalapeño, 1 Anaheim chili pepper, 2 large cucumbers, 1/2 bundle of parsley and cilantro, and 2 inches of fresh ginger. I had lots of leftover juice, so I’d recommend making a blend that you like to drink, and use only what you need for the lime aid recipe.

1. Combine lime juice, coconut water, liquid sweetener, green veggie juice and pink salt (if using) in a large pitcher.
2. Stir until liquid sweetener is thoroughly dissolved. If using raw honey, combine it first with 1/4 cup warm water until completely dissolved, and then add to the rest of the ingredients.
3. Adjust sweetener as needed.

Serve immediately over ice, or cover the pitcher with a tightly fitting lid, and store in the refrigerator for up to 3 days. Garnish with lime wedges, cucumber wheels, a sprig of fresh parsley, and/or cilantro. 

Separation is natural while the mixture sits, stir the limeade to reconstitute.
